A yeast which ferments well at lower temperatures (13-17°C). Well suited to wines where preserving aromas is desirable.
Can also be used for country wines. Dominic Rivard, consultant fruit winemaker stated in an online article for Wine Maker about country wine yeasts: 'Freddo: I have just started to use this yeast strain recently and I am very happy with the results. I find that it brings out the fresh fruit aroma that I look for many of the wine styles I produce.'
